Pumpkin Pie Krispie Treats

My next contribution to Pumpkin Week is this quick recipe for Pumpkin Pie Krispie Treats.  If you like rice krispie treats, you will love this version!!



PUMPKIN PIE KRISPIE TREATS

Treats:
3 Tbsp. butter
10 oz. package of mini marshmallows
1/2 tsp. cinnamon
1 tsp. pumpkin pie spice
6 c. rice krispie cereal

Topping:
1 c. vanilla chocolate chips or vanilla almond bark
1 tsp. pumpkin pie spice
1/4 c. canned pumpkin 

Directions:
  1. In a large bowl, melt butter in microwave for 30 seconds.  
  2. Add marshmallows and microwave for 1 minute.
  3. Stir in cinnamon and pumpkin pie spice until smooth.
  4. Add rice krispie cereal and mix until combined.
  5. Using buttered spoon, press mixture into 13 x 9 inch pan coated with cooking spray. 
  6. In a separate bowl, melt chocolate or almond bark in microwave in increments of 30 seconds until completely melted.
  7. Add pumpkin pie spice and canned pumpkin.  Mix together.  Spread on top of treats and let cool completely.
  8. Cut into treats and serve.

Chocolate Covered Strawberries Ice Cream Pie

I'm always trying to find gluten free dessert recipes that my hubby can eat.  While in my search I also want something that the rest of the family will eat too.  Then, a co-worker brought a similar pie like this one to work.  Rice krispie crust with ice cream....YES!!!!  Who wouldn't want that?!?!  I created my own pie with extra ingredients to make it a special treat.  It was a hit in my house.  I will be making more with different combinations soon!


Crust Ingredients:
1 Tbsp. butter or margarine, melted
1 (7 oz.) container of marshmallow fluff
1/2 c. mini chocolate chips
2 1/2 c. rice krispies

Pie Ingredients:
1/2 pint of strawberry ice cream, slightly softened
1/2 pint of fresh strawberries
Magic Shell hardening chocolate syrup

Directions:
  1.  In a medium bowl, mix together butter and marshmallow cream.  
  2. Add chocolate chips and rice krispies, mix thoroughly.  
  3. Press into pie plate.  I used the back of my measuring cup to help form the crust.
  4. Freeze crust for 30 minutes.
  5. Spread and press ice cream into crust.  Use back of spoon dipped in warm water to smooth the top.
  6. Decorate with strawberries and drizzle with chocolate syrup.
  7. Freeze until served.

Avalanche Bars

These aren't your ordinary krispie treats.  They are hardened with white chocolate and simply melt in your mouth.  Bet you can't leave them alone!!


Ingredients:
24 oz. pkg of vanilla almond bark
1/4 cup creamy peanut butter
3 cups Rice Krispies
1 1/2 cups mini marshmallows
1/4 cup mini chocolate chips + 2 Tbsp for garnish (or 1/2 cup of regular choc. chips + 1/4 cup garnish)

Directions:
  1. In microwave-safe bowl heat almond bark for 1 minute.  Stir and continue in 30 second increments until melted.  
  2. Combine the peanut butter with the bark, add the krispies. 
  3. Let cool approx 15 – 20 minutes stirring every 5 minutes or so to help cool. 
  4. Add the marshmallows and the mini chocolate chips and stir to combine. 
  5. Line 9x13 pan with aluminum foil (my own added trick), folding extra over edges of pan, grease lightly.  
  6. Dump mixture into pan.  Spread evenly, pressing lightly with the back of your spoon. Press the remaining chocolate chips into the top for garnish. When the bars are completely cooled, pull out of pan by lifting aluminum foil, cut into squares and enjoy!

Favorite No Bake Treats of 2012

It has been a great year full of fun recipes, projects, and making new blogging friends.  I thought I would share my favorite no bake treats from 2012.  They are all easy to make and will be the hit at your parties, gatherings, or just for fun.  Thanks to all of you for a great year.  I'm really looking forward to 2013!!

Cake Batter Krispie Treats



Rice Krispie treats have always been a favorite in my house.  Such a great way to have an easy, kid-friendly, gotta-have-something-sweet snack in minutes.  When I heard about adding cake mix to them I had to give it a try.  And everything is better with sprinkles!!  These will put smiles on the faces of your loved ones without a lot of time in the kitchen.

Ingredients:
3 Tbsp. butter
1 (10 oz.) bag of marshmallows
2/3 cup boxed dry yellow or white cake mix
6 cups rice krispie cereal
1/2 cup sprinkles

Directions:
1.  Spray a 9x13 pan with nonstick spray. Set aside.
2.  In a large bowl, melt butter in microwave.  Add marshmallows and microwave in 30 second increments until fully melted and smooth when stirred.
3.  Stir in the dry cake mix and sprinkles.
4.  Stir in the cereal until it is completely coated with the marshmallow mixture. 
5.  Press into pan with a spatula sprayed with nonstick spray.
6.  Cool completely and cut into squares.

Mallow Brownie Bars



Everything that's irresistible about a dessert got rolled into this recipe. What's your favorite part? The brownies on the bottom? The marshmallow in the middle? Or the chocolate peanut butter crunchy goodness  on the top?  Just make sure you have a big glass of milk ready with this one!!

Ingredients:
1 (19.8 ounce) package fudge brownie mix  
1 (10.5 ounce) package miniature marshmallows 
2 cups semisweet chocolate chips  
1 cup peanut butter  
1 tablespoon butter  
1 1/2 cups crisp rice cereal

Directions : 
1.  Prepare brownie batter according to package directions. Pour into greased 9x13 pan. Bake at 350 degrees for 28-30 minutes. 
2.  Top with marshmallows; bake 3 minutes longer (marshmallows will not be completely melted).  Let marshmallows cool before topping with next step.
3.  In a saucepan, combine the chocolate chips, peanut butter and butter. Cook and stir over medium heat until smooth. Remove from the heat; stir in cereal. Spread over brownies. 
4.  Refrigerate for 1-2 hours or until firm before cutting.

Watermelon Krispie Slices




Here in the Midwest it has been a super hot past few weeks.  I've been seeking out recipes that won't need my oven to be heated.  In my search, I discovered these cute treats just in time for my family's 4th of July gathering.  They would be great for any summer event.  And are sure to be a hit!!

Makes: 16-20 slices

 

Ingredients:


For the green outer ring:
4 cups Rice Krispies cereal
4 cups mini mashmallows
3 Tablespoons butter
green food coloring

For the red center:
5 cups Rice Krispies cereal
5 cups mini marshmallows
3 Tablespoons butter
red food coloring
chocolate chips

 

Directions:


Prepare two 8" or 9" cake pans by greasing with butter or non-stick spray.

To make the green outer rings:
  1. Melt marshmallows and butter in a large bowl in the microwave about 1 minute, or until very puffy.  Stir until combined.
  2. And add in green coloring, stir until reach desired color.
  3. Add rice krispies.  Stir mixture together until combined.  
  4. Divide the mixture between the two prepared cake pans, and press along the sides of the pans, creating a ring about 1-1.5 inches tall and 1-1.5 inches wide/thick. Rub a bit of butter on your hands as necessary, to prevent the mixture from sticking to your hands.
 

To make the red centers:
  1. Repeat as above, using the ingredients listed.
  2. Press red mixture into the center of the two cake pans, using buttered hands to keep from sticking.
  3. Add chocolate chips for "seeds".
  4. Put in refrigerator until firm.  
  5. Flip out of pans and cut into pieces.
  
**  For the coloring- I used Americolor gel in Mint Green and Americolor gel in Super Red
