Ham and Cheddar Chowder

It's finally starting to feel like fall here in the Midwest.  The leaves are changing colors, the air is crisp, and pumpkins are everywhere.  This recipe is one of my family's favorites to warm up to.  It is a creamy chowder that warms you from head to toe.

Directions:

STEP 1:
2 c. carrots, diced
2 c. celery, diced
2 c. onion, diced
6 large potatoes, peeled and diced
10 c. water

Bring the veggies and water to a boil in a large pot.  Boil until tender, approximately 15 minutes.  Reduce to medium heat.

STEP 2:
1/2 c. butter, melted
1/2 c. flour (gluten-free if needed)
1 tsp. salt
4 c. milk
2 tsp. garlic powder

Mix these three ingredients together in a small bowl with a whisk.  Gradually add to vegetables in water and stir thoroughly.

STEP 3:
4 c. ham, diced
16 oz. package of shredded cheddar cheese
bacon bits
crackers

Add ham and cheese to chowder, saving a little of the cheese to sprinkle on the top of servings.  Mix and heat thoroughly.  Serve with bacon bits, cheese, and crackers.

Crockpot Cheesy Fiesta Dip


This recipe is an old favorite that I pulled out recently.  I used to take it to friend gatherings many years ago.  Can't believe I forgot about it.  You make this for your next party....you won't be forgotten.  It will be requested over and over again!

Ingredients (Makes a large crockpot recipe.  Half recipe for smaller groups):
2 lbs. ground beef, browned
2 cups white rice, cooked
4 lbs. Velveeta cheese block (I used the Queso Blanco), melted in microwave
2 cans Rotel 
2 cans corn, drained
2 pkg. taco seasoning
Tortilla chips

Directions:
1.  Brown hamburger, cook rice, and melt cheese. 
2.  Add all ingredients to a large crockpot.  Heat thoroughly, mixing often. 
3.  Serve with your favorite tortilla chips. 

**For easy clean up use a crockpot liner.
