Back to School Confetti Cookie Bars

My next contribution are these Back to School Confetti Cookie Bars.  These are a perfect dessert for a school themed dessert!  Topped with alphabet sprinkles from Sweets & Treats, they are the perfect addition to make that first day special.  Send them in your kid's lunchbox, or save them for home. #SweetsSquad

Ingredients:
1 box of yellow or vanilla cake mix
2 eggs
1 stick melted butter
can of vanilla frosting
sprinkles (I used the Sweets & Treats Sweet Sprinkles Mix: Prime Time in the mix, and Quin Sprinkles: ABC 123 on the top of the bars)

Directions:
  1. Mix cake mix, eggs, butter, and sprinkles together in a large bowl.
  2. Spread into 9x13 pan, sprayed with cooking spray.
  3. Bake at 350 degrees for 18-20 minutes.
  4. When cooled, frost, top with sprinkles, and cut into bars.

Reese's Overload Gooey Brownies



My family loves brownies.  But not just any kind of brownies.  We like the kind that are barely done and gooey in the middle.  You can't help but get that kind of brownie with this recipe.  The condensed milk keeps them soft with that out-of-the-oven-a-little-too-soon taste.   



Ingredients:
9x13 family size brownie mix
All ingredients that the mix calls for (eggs, oil, water, etc...)
1/2 can of sweetened condensed milk
8 Reese's peanut butter cups
1 package Reese's pieces

Directions:

  1. Make the brownie mix as it calls for on the box.  
  2. Pour half the brownie mixture into a greased (or greased and parchment lined) 9x13" pan.  
  3. Cut Reese's peanut butter cups in 1/4 sections.  Place on top of the brownie mix.
  4. Cover the peanut butter cups with the remaining brownie mix.
  5. Pour 1/2 can of condensed milk over the top staying away from the edges of the pan. 
  6. Top with Reese's pieces.
  7. Bake 5 -7 minutes longer than the box calls for.  It will still be gooey.
  8. Let cool completely before cutting.

4th of July Cookie Cake



Needing a quick and easy dessert for 4th of July?   This cookie cake can be made quickly to please all of your guests, or take to a gathering.  Everyone will devour it and ask for more.  It even holds up well in the heat!

Ingredients:
1 box of yellow or white cake mix
2 eggs
1 stick melted butter
red and blue sprinkles
 
Directions:

1.  Mix all ingredients together in a large bowl.  
2.  Spread into 9X13 pan (sprayed with cooking spray).  
3.  Bake at 350 degrees for 20 minutes.  
4.  When cooled, cut into squares.

Scarecrow Treats


This is a great dessert bar recipe that a co-worker brought to a luncheon.  I couldn't leave them alone.  They were chewy, crispy, and gooey all in one.  You will love serving these at your Thanksgiving feast.

Ingredients:
1 stick butter, melted
1 box yellow cake mix
2 eggs
3 cups mini marshmallows
1 cup light corn syrup
1/2 cup sugar
1/2 cup brown sugar
1 cup creamy peanut butter
2 teaspoons vanilla
2 cups Rice Krispies Cereal
2 cups salted peanuts
1 cup Reese's pieces




Directions:
1.  Mix butter, cake mix and eggs with an electric mixer.  Pat mixture into greased 9x13 in baking dish.  Bake at 350 degrees for 15 minutes. 
 

2.  Remove from oven, sprinkle marshmallows over the top and return to oven for an additional 3 minutes.  Remove from oven.

3.  Meanwhile, pour cereal, peanuts and candy into a large bowl.  Set aside. 

4. Bring corn syrup, sugar and brown sugar to a boil o
ver medium-high heat on the stove.  Remove from heat and stir in peanut butter and vanilla. 
 

5.  Immediately pour the peanut butter mixture over cereal/candy mixture.  Stir quickly to coat and then pour on top of the marshmallow layer of bars.  Working quickly, spread this layer over the marshmallows. 
 

6.  Set aside to cool about 30 minutes before slicing into bars.

Lazy Day Cookie Cake


Needing a quick and easy dessert for a last minute gathering?  This is my new favorite fix.  This cookie cake can be made quickly to please any hungry crowd.  I've made it in the morning to take to work, and even on my lunch break.  So easy and delicious.

Ingredients:
1 box of yellow or white cake mix
2 eggs
1 stick melted butter
2 cups chocolate chips.
 
Directions:

1.  Mix all ingredients together in a large bowl.  
2.  Spread into 9X13 pan (sprayed with cooking spray).  
3.  Bake at 350 degrees for 20 minutes.  
4.  When cooled, cut into squares.
