Cherry Cheesecake Surprise Layered Dessert


I got this recipe years ago from a friend of mine.  I remember thinking that it looked so complicated and tasted so decadent.  I was very happy to find that it was quick and easy.  Try it out for your self!

Ingredients:
2 packages pre-made shortcakes, usually come 6 to a package...may be called dessert cakes or dessert shells in your grocery store (or 1 Angel food cake)
2 (8 oz.) packages cream cheese, softened (can use fat free)
1 (16 oz.) container sour cream (can use low fat)
2 sm. boxes (3.5 oz) vanilla instant pudding (can use fat free/sugar free)
1 large can cherry pie filling (30 oz.)

Directions:

  1. Make pudding as directed on box, chill.  
  2. In separate large bowl, blend cream cheese and sour cream until smooth.  
  3. Fold in pudding, blend on low until smooth.   
  4. Cut bread into 1/2 inch pieces and cover bottom of 9x13” pan. 
  5. Pour cream mix over bread, smooth out evenly.  
  6. Top with spoonfuls of cherry pie filling.  Use a knife to swirl it through the cream filling.
  7. Refrigerate for one hour.  
  8. Scoop into bowls and devour with a spoon.  Enjoy!!

**You can also make this dessert in a deep dish/trifle bowl by doing 2 layers of cake, mix, and cherries.  It can also be made into single servings by using small dessert dishes.

Blooming Oreo Dessert



My dear grandma passed away 2 years ago.  Not a day goes by that I don't think about her.  This was one of her recipes that she always made for family gatherings.  She was an amazing cook and wonderful person.  I only hope to be half the person that she was.  I have included her 9x13"pan version and my fun potted version for you to enjoy.

9x13" pan version:
1 pkg Oreo cookies, crushed      
1/2 c. butter, melted      
1 pkg. instant vanilla pudding
2 c. milk
8 oz. cream cheese, softened      
1 c. powdered sugar
1 carton Cool Whip

Mix Oreos and butter.  Press all but 1/2 cup into bottom of 9x13” pan with fork to form crust.  Combine cream cheese, powdered sugar, and ½ of Cool Whip, pour into pan over Oreo crust.  Combine pudding and milk, pour over cheese mixture.  Refrigerate for 15 minutes.  Cover with remaining Cool Whip.  Sprinkle with remaining crushed Oreos.  Refrigerate until served.

9 flower pots version:
Mix ingredients as noted above in pan version, leaving out the butter.  Layer into plastic pots evenly in this order - Oreos, cream cheese mixture, Cool Whip, pudding, more Cool Whip, Oreos.  Top with fake flowers for decoration.

Pumpkin Pudding Dessert

Every time there is a birthday at work we have to celebrate with food.  It is a must!!  Gotta have a table full of wonderful food waiting for that special person.  We love birthdays!!  This past week I took this dessert.  Little to say it didn't last long.  This was what was left after everyone devoured it.  I would say it was a successful dish...wouldn't you??

Ingredients:
1 box of Cheesecake Jello Pudding
1 box of White Chocolate Jello Pudding
3 1/2 cups crushed Chocolate Chip cookies (I used Nabisco Chips Ahoy)
6 Tbsp. butter (melted)
1 can pumpkin pie filling
1 tub whipped topping
Milk for the pudding

Directions:
1.  Mix melted butter with 3 cups of the crushed cookies until moist. Press mix into bottom of a 9 x 13 pan. 
2.  Mix cheesecake pudding with 1 3/4 cup cold milk. Spread over the cookie crust. Let set in the fridge for 10 min. 
3.  Mix white chocolate pudding with only 1 cup of milk, whisk until starting to firm. Add the canned pumpkin and mix well. Spread over the first layer of pudding.  Let set in fridge for another ten minutes.
4.  Top with container of whipped topping and sprinkle remaining 1/2 cup of crushed cookies.
5.  Freeze until 1 hr. before serving.  Store in fridge or freezer.  (I just put it back in the fridge...until I ate the rest).
