Strawberry Overnight Oats

Welcome to #BrunchWeek 2020 hosted by Love and Confections and A Kitchen Hoor's Adventures! This is our 8th year of #BrunchWeek and while it is a little different this year, 22 bloggers are excited to share all our favorite Brunch recipes. We have a huge variety including French toast, danish, waffles, pancakes, hash, fruit salad, cocktails, mocktails, vegan, keto, and plenty of desserts! We hope you enjoy all our Brunch recipes!


My next contribution are Strawberry Overnight Oats.  I got this recipe from my mom.  She makes this for breakfast a lot, and it travels well for our camping trips.  Perfect for an on-the-go breakfast!

Makes 3 servings per jar

Ingredients:
3/4 cup uncooked old fashioned rolled oats
2/3 cup skim milk
3/4 cup low-fat Greek yogurt
1 tsp. dried chia seeds
1 tsp. vanilla extract
3 Tbsp. strawberry jam or preserves
1 Tbsp. brown sugar
fresh strawberries or other fruit, diced

Directions:
  1. Add all ingredients into a large mason jar, except the fresh fruit.
  2. Shake well.
  3. Refrigerate overnight, or up to 3 days.
  4. Stir well.  Serve chilled over fresh fruit.

Peanut Butter Chocolate Chip Greek Yogurt Fruit Dip

Today, I have created a delicious fruit dip featuring products from Stoneyfield. #stoneyfield   It can be eaten with fruit, or just enjoyed on it's own.  If you like peanut butter, you will like this.  I received these products to create this post.  All opinions are my own.

Ingredients:
2 c. plain Greek yogurt (I used Stoneyfield)
1 c. creamy peanut butter
1/4 c. honey
3/4 c. chocolate chips (1/2 c. to mix in, 1/4 c. to sprinkle)
fruit

Directions:

  1. Mix together yogurt, peanut butter, and honey in a medium sized bowl.
  2. Stir in 1/2 cup of chocolate chips.
  3. Sprinkle with the remaining chocolate chips.
  4. Serve with fruit, or eat with a spoon.

Ingredients:
16 oz. sweet tea, chilled
16 oz. chardonnay, chilled
1 lemon sliced

Directions:
  1. Combine tea and chardonnay.
  2. Pour into a pitcher or carafe.  (I love the Grosche RIO Sangria Pitcher & Water Infuser Carafe!)
  3. Add lemons and serve.

Apple Puff Pies

Today, I have created delicious puff pies featuring products from Nordic Ware and Wewalka. #nordicware #easypuffpastry.  They are warm, flakey, and melt in your mouth.  Filled with apples and topped with cinnamon and sugar, they make your house smell amazing!  I received these products to create this post.  all opinions are my own.

Ingredients:
Wewalka puff pastry dough
can of apple pie filling
1 egg white
cinnamon and sugar mixture

Directions:

  1. Unwrap and unroll dough onto a baking sheet.  (I used the Nordic Ware Prism Half Sheet.  Such a great pan!  I also love how the dough comes on it's own parchment paper).  
  2. Cut into 8 rectangles.
  3. Chop pie filling into smaller apple chunks.
  4. Spoon pie filling along middle of each rectangle.
  5. Roll lengthwise facing crease down.
  6. Press ends together with a fork.
  7. Pierce each pie with a knife on the top a few times.
  8. Brush egg white over each pie.
  9. Sprinkle with cinnamon and sugar.
  10. Bake at 400 degrees for 14 - 16 minutes.
  11. Serve warm or cool.

Cookie Crumble Cinnamon Roll Cake

Today, I have created a delicious breakfast cake featuring products from Silpat and Rhodes. #MYSILPAT #RhodesBread  It's like breakfast and dessert all in one.  Topped in a chocolate chip cookie crumble, you can't resist this cake!  I received these products to create this post.  all opinions are my own.

Ingredients:
6 Rhodes Cinnamon Rolls, thawed but still cold
cream cheese frosting from Rhodes package

Topping:
1/2 c. sugar
1 c. flour
1/2 c. butter, softened
1/3 c. mini chocolate chips

Directions:

  1. Place rolls on cutting board.  Cut into 6 pieces each.
  2. Lay in round baking pan or pie dish.  (I put the 8-inch Silpat round mat in the bottom of my pan to keep it from sticking to the bottom).  Mash together.
  3. Mix together all topping ingredients.  Spoon over the top of the rolls.  Spread out using the back of the spoon.
  4. Bake at 350 degrees for 25 - 30 minutes.
  5. Drizzle frosting over the top.  Cut and serve.
