Oreo Cookies - Co-Host on Mommy's Sweet Confessions

Hello everyone!  My name is Nichi (sounds like Niki) and I blog over at The Mandatory Mooch.  I'm honored to be a co-host here today....thanks, Lindsay!!  Growing up I was always mooching food off of my dad. Hence my nickname "Mooch". To me there are certain foods out there that you just have to have...therefore, making them a "mandatory mooch" if someone has it.

I am a born and raised Kansas girl who loves family and food.  As a wife and working mother of two wonderful little girls, life can get crazy.  Many of the recipes that I tend to use are quick and easy...no crazy ingredients that you have to search for.  Just simple good food that can make my family happy.  

Today I'm sharing my latest creation Oreo Drizzle Cookies.  I hope you enjoy.

Makes approx. 25-30 cookies

Ingredients:
1 white cake mix
2 eggs
1/3 c. vegetable oil
3 Tbsp. water
8 crushed Oreo cookies
8 Oreos broken into 1/4 pieces
almond bark or white chocolate, melted

Directions:
1.  Mix together cake mix, eggs, oil and water until well combined.  Stir in crushed Oreos.
2.  Drop by spoonfuls onto cookie sheet.  Top with 1/4 piece of Oreo.
3.  Bake at 350 degrees for 10-12 minutes.  Let cool completely.
4.  Drizzle with almond bark or white chocolate. I used a cake decorating bag to pipe over the cookies.

Mini Apple Pies



Being a working mother and wife makes for a crazy life.  I need simple quick recipes that I can share with my family.  Today I'm sharing my newest creation...easy Mini Apple Pies.  They will fill your house full of a warm cinnamon apple smell without slaving away in the kitchen.  I can't wait to try them with other wonderful fillings too.  I hope you enjoy!!


Makes approx. 20 mini pies

Ingredients:
2 refrigerated pie crusts
1 can apple pie filling
cinnamon and sugar

Unroll pie crust on floured surface

Cut out circles with cookie or biscuit cutter.  I used a 2.5" biscuit cutter.

Chop 1/2 can of pie filling into smaller chunks
Place pie crust circles on a baking sheet.  I always use parchment paper.  Add a teaspoon full of filling to middle and top with another circle.

Crimp edges with a fork

Cut vent hole in the top and sprinkle with cinnamon and sugar.  Bake at 450 degrees for 10 - 12 minutes.

Co-hosting Pumpkin Delight Recipe Series

I'm so glad fall is here.  Anyone else?  Just the thought of pumpkins, leaves changing colors, cooler days, chilly evenings, soups, football on TV, and the smell of cinnamon in the air makes me all giddy.  Living here in the Midwest I get the joy of seeing the changing seasons.  Fall is my favorite time of year.  After such a hot summer I'm ready for a nice cool fall.  This recipe will get you into the mood too.

Now I have to tell you.  This cake went through a lot to get here.  It was completely done and cooling on the stove when I decided to move it to get a better picture.  I grabbed a pot holder and carried it with one hand...big mistake...across the kitchen.  Then it happened, the pan slipped out of my hands and crashed to the floor.  As I looked at it is disbelief I wanted to cry.  Majority of the cake had slid right off the pan and onto the floor.  Thankfully my wonderful hubby was there to keep me from saying too many bad words and clean it up.  I calmly cut some pieces for my two girls who had been waiting so patiently all morning for a taste.  Then I took my blog pictures, got me a glass of milk, and had my own not-so-perfect-slightly-mashed-but-very-tasty piece myself.

Cake Ingredients:
1 box yellow cake mix
4 eggs
1/2 c. vegetable oil
1/2 c. milk
1 (3.4 oz.) box vanilla instant pudding mix
1/2 c. sour cream
1 (15 oz.) can pumpkin

Topping:
1 stick butter
3/4 c. packed brown sugar
1/2 tsp. ground cinnamon

Frosting:
3/4 cups powdered sugar
1/4-1/2 cup heavy cream (start w 1/4 cup and add a little more cream if needed)

Directions:
1. Preheat oven to 350 degrees, spray a large jelly roll pan with non stick cooking spray.
2. Place cake mix, eggs, oil, milk, pudding, sour cream and pumpkin into a stand or electric mixer, beating until well combined. Pour onto pan, spreading evenly.

 3. Melt butter in microwave. Add brown sugar and cinnamon to bowl, mixing until combined. Drizzle mixture evenly over cake then take a knife and run it through to swirl.

4. Bake for 30-35 minutes, until cooked through.
5.  Mix powdered sugar and cream until creamy and smooth. Drizzle over warm cake then let cool for 20 minutes before cutting into squares. Refrigerate if not serving same day.

Apples Galore Recipe Series

Apple Dump Cake

This is a recipe that may have been passed down in your family.  I have had it many times, but always made by someone else.  I decided it was time to try it out myself.  If you like apple crisp or apple pie, this is an easy treat that will please your tastebuds.  I can still smell my kitchen full of warm apple cinnamon smell.  Mmmmm...

** We actually ate this for dessert, and then breakfast the next morning.  Great for both!!

2 cans apple pie filling
2 Tbsp. cinnamon
1 box yellow cake mix
2 sticks butter
1 cup pecans, chopped 
whipped cream or ice cream 
Dump two cans of apple pie filling into a 9×13 pan. Sprinkle with cinnamon. Crumble the dry cake mix over the apple mixture. Sprinkle the pecans over the cake mix. Slice each stick of butter into 12 equal pieces, and place the pieces on top. Cook at 375 degrees for about 45 minutes or until golden brown. Serve with whipped cream or vanilla ice cream.
