Chocolate Banana Muffins


Welcome to #BrunchWeek 2020 hosted by Love and Confections and A Kitchen Hoor's Adventures! This is our 8th year of #BrunchWeek and while it is a little different this year, 22 bloggers are excited to share all our favorite Brunch recipes. We have a huge variety including French toast, danish, waffles, pancakes, hash, fruit salad, cocktails, mocktails, vegan, keto, and plenty of desserts! We hope you enjoy all our Brunch recipes!


My first contribution are these Chocolate Banana Muffins.  They are a great way to use up any ripened bananas and they only have 3 ingredients!! 

Makes approx. 18 muffins

Ingredients:
1 chocolate cake mix
3 ripe bananas
2 eggs

Directions:
  1. Mix all ingredients together until fully combined.
  2. Fill muffin liners 3/4 full.  
  3. Bake at 350 degrees for 15-17 minutes.

The Best Gluten Free Chocolate Cake Mix - Jessica's Natural Foods


I've been making birthday cakes for my girls since they were born.  Each year is a new theme to go along with their age.  This year was a little trickier than usual.  You see, my oldest daughter has been gluten free since last summer.  

Trying to find a good gluten free cake recipe or mix has been a struggle...UNTIL NOW!!

I found the most amazing cake mix and just had to share with you.  It is Jessica's Natural Foods chocolate cake mix.  My whole family was in denial that it was gluten free after tasting it.  It is a moist rich cake with no gritty after taste.  The smile on my daughter's face was priceless when she tried it.  We will be using this product for many events in the future.  Plus, I sliced the leftover cake and froze it individually for her to eat later.  Perfection!!  So, if you need a gluten free cake mix or treat, give this one a try.  You won't be disappointed.




I made her a video/movie themed cake because she has been interested in that field lately.  It was fun to create something she loved and something she could eat!

4th of July Cookie Cake



Needing a quick and easy dessert for 4th of July?   This cookie cake can be made quickly to please all of your guests, or take to a gathering.  Everyone will devour it and ask for more.  It even holds up well in the heat!

Ingredients:
1 box of yellow or white cake mix
2 eggs
1 stick melted butter
red and blue sprinkles
 
Directions:

1.  Mix all ingredients together in a large bowl.  
2.  Spread into 9X13 pan (sprayed with cooking spray).  
3.  Bake at 350 degrees for 20 minutes.  
4.  When cooled, cut into squares.

Butter Pecan Banana Bread



I'm always looking for ways to use ripe bananas.  How about you?  My girls love to have fresh banana bread for breakfast or a snack.  Being a working mom, I don't have time to spend hours in the kitchen.  This recipe is simple and tasty.  You will keep this one on hand for the next time those bananas are sitting on the counter needing to be used.
Makes 2 loaves


Ingredients:
1 butter pecan cake mix
3 very ripe bananas
1 stick butter, melted
3 eggs


Directions:
  1. Mash the bananas, mix in butter.
  2. Add cake mix and eggs, stir until well blended.
  3. Pour into greased loaf pans.  Bake at 350 degrees for 45 - 55 minutes, or until a toothpick inserted into the middle comes out clean.
  4. Let cool completely.  Removed from pan, slice, and serve.

Crumb Coffee Cake with Apple Cider Glaze

 
Yes, I know it is almost spring.  But sometimes you just have a craving for the "fall" foods.  I love pumpkin, cinnamon, apples, and cider.  Recently, I made this cake to curb some of those needing-fall-gotta-have-it cravings.  It is a moist yummy cake with a hint of fall poured over the top.  You will love it!!

Cake:
1 yellow or white cake mix and ingredients on back of box

Topping:
2/3 c. sugar
2/3 c. brown sugar
1 Tbsp. cinnamon
1 1/2 c. flour
1/2 c. butter or margarine

Glaze:
2 c. powdered sugar
1 tsp. vanilla
1/4 c. apple cider

Directions:
  1. Make cake batter as directed on back of box.
  2. Pour into lightly greased (or parchment covered) jelly roll pan.
  3. Bake 15 minutes.
  4. Remove from oven and sprinkle with topping.
  5. Bake for additional 10 minutes.
  6. Cut into pieces, drizzle with glaze and serve warm.

Red Velvet White Chip Cookies


Are you a red velvet cake fan?  One of my best friends loves it.  I thought of her while making these cookies.  They are super quick and easy with only a few ingredients.  A great treat to make for your holiday gatherings or last minute guests.

Makes approx. 18 large cookies 

Ingredients:
1 red velvet cake mix
2 eggs
1/3 c. vegetable oil
3 Tbsp. water
1 c. white chocolate chips

Directions:
1.  Mix together cake mix, eggs, oil and water until well combined.  Stir in chocolate chips.
2.  Drop by heaping spoonfuls onto cookie sheet.  (I like to use parchment paper to line my cookie sheet)
3.  Bake at 350 degrees for 10-12 minutes.  Let cool completely.

Butter Pecan Banana Chip Muffins

 
These extremely moist and delicious muffins are a new favorite in my house.  Of course they came about by raiding my pantry on a Sunday morning looking for breakfast.  The combination of butter pecan, banana, and chocolate chips is irresistible.

Makes 18 muffins:

Ingredients:
1 butter pecan cake mix
2 bananas, ripened and mashed
3/4 c. water
2 eggs
1/3 c. vegetable oil
1 c. chocolate chips, frozen (keeps them from melting while baking)

Directions:
  1. Mix all ingredients together until fully combined, except chocolate chips.
  2. Fold in chocolate chips.
  3. Fill muffin papers 3/4 full.  Bake at 350 degrees for 18-20 minutes until lightly browned.
