Turkey and Cheese Rollups


Welcome to #BrunchWeek 2020 hosted by Love and Confections and A Kitchen Hoor's Adventures! This is our 8th year of #BrunchWeek and while it is a little different this year, 22 bloggers are excited to share all our favorite Brunch recipes. We have a huge variety including French toast, danish, waffles, pancakes, hash, fruit salad, cocktails, mocktails, vegan, keto, and plenty of desserts! We hope you enjoy all our Brunch recipes!

My next contribution are these Turkey and Cheese Rollups.  These were and easy and quick fix while we were home quarantined this spring from COVID-19. 

Makes 12 rolls

Ingredients:
1 can (8 oz) refrigerated crescent rolls
shredded cheese
sliced turkey

Directions:
  1. Heat oven to 375 degrees.  Spray a 9-inch pie or cake pan with cooking spray.
  2. Unroll crescent rolls into 4 rectangles, press together at the seams.
  3. Top with a slice of turkey and shredded cheese.
  4. Starting on short edge of rectangle, roll up tightly and cut with a serrated knife into 3 rolls.
  5. Place evenly separated in pan with a spiral side up.
  6. Bake for 17-20 minutes or until golden brown.

Strawberry Overnight Oats

My next contribution are Strawberry Overnight Oats.  I got this recipe from my mom.  She makes this for breakfast a lot, and it travels well for our camping trips.  Perfect for an on-the-go breakfast!

Makes 3 servings per jar

Ingredients:
3/4 cup uncooked old fashioned rolled oats
2/3 cup skim milk
3/4 cup low-fat Greek yogurt
1 tsp. dried chia seeds
1 tsp. vanilla extract
3 Tbsp. strawberry jam or preserves
1 Tbsp. brown sugar
fresh strawberries or other fruit, diced

Directions:
  1. Add all ingredients into a large mason jar, except the fresh fruit.
  2. Shake well.
  3. Refrigerate overnight, or up to 3 days.
  4. Stir well.  Serve chilled over fresh fruit.

Chocolate Banana Muffins

My first contribution are these Chocolate Banana Muffins.  They are a great way to use up any ripened bananas and they only have 3 ingredients!! 

Makes approx. 18 muffins

Ingredients:
1 chocolate cake mix
3 ripe bananas
2 eggs

Directions:
  1. Mix all ingredients together until fully combined.
  2. Fill muffin liners 3/4 full.  
  3. Bake at 350 degrees for 15-17 minutes.

Bacon Ranch Tortilla Rollups

My last contribution are these Bacon Ranch Tortilla Rollups.  They are an easy appetizer to serve at any party or gathering.  Made with Cabot cheese, they are savory in every way.

Makes approx. 24 rolls

Ingredients:
1 (8 oz.) block of cream cheese, softened
1/2 c. shredded cheddar cheese (I used Cabot's Two State Farmer's)
1/2 pkg. dry ranch mix
1/3 c. bacon bits
2 large flour tortillas

Directions:
  1. Mix filling ingredients together.
  2. Spread over tortillas all the way to the edges.
  3. Roll up to form 2 long rolls.
  4. Fill in ends of rolls with filling using a knife.
  5. Refrigerate for at least 30 minutes.
  6. Cut into 1/2 inch rolls.

Mango Strawberry Smoothie

My next contribution is this Mango Strawberry Smoothie.  It is sweet and blended to perfection using Torani's mango syrup and Dixie Crystals sugar.  For added fun, I put the smoothie into a beautiful Revere Triangle Double Old Fashioned glass from Joyjolt.  You will love it for breakfast, brunch, a snack, or a treat! #Torani

Ingredients:
1 c. frozen mango
1/2 c. fresh strawberries, cleaned and diced
1 c. milk
1 Tbsp. Torani mango syrup
1 Tbsp. sugar (I used Dixie Crystals)
whipped cream, if wanted

Directions:
  1. Add all ingredients to blender.  Blend until smooth.
  2. Top with whipped cream and a strawberry.

Spring Blooms Cake

I love making cakes, especially for family celebrations.  This cake was served at my sister's birthday party.  Using bright colored sprinkles from Sweets & Treats made it pop with color.  One of my favorite cakes that I've created! #SweetsSquad

Ingredients:
4 layer cake, baked and leveled
buttercream frosting
sprinkles (I used Sweets & Treats: Sweet Treats sprinkle mix)
BBQ skewers
candy melts
piping bags
parchment paper

Directions:
  1. Bake and level cake.
  2. Frost between each layer and around the outside of the cake.  Pipe frosting around the bottom of the cake and add sprinkles.
  3. Add sprinkles to the top of the cake.
  4. Melt candy melts in piping bags.  
  5. Pipe the melts onto parchment paper in a flower design.  Add a large pearl sprinkle to the middle.  Let cool completely.
  6. Pipe circles onto the parchment paper, lay skewers in the middle, top with a candy flower.  Let cool completely.  
  7. Add flowers to the top of the cake.  Keep refrigerated until an hour before serving.
