Strawberry Overnight Oats

Welcome to #BrunchWeek 2020 hosted by Love and Confections and A Kitchen Hoor's Adventures! This is our 8th year of #BrunchWeek and while it is a little different this year, 22 bloggers are excited to share all our favorite Brunch recipes. We have a huge variety including French toast, danish, waffles, pancakes, hash, fruit salad, cocktails, mocktails, vegan, keto, and plenty of desserts! We hope you enjoy all our Brunch recipes!


My next contribution are Strawberry Overnight Oats.  I got this recipe from my mom.  She makes this for breakfast a lot, and it travels well for our camping trips.  Perfect for an on-the-go breakfast!

Makes 3 servings per jar

Ingredients:
3/4 cup uncooked old fashioned rolled oats
2/3 cup skim milk
3/4 cup low-fat Greek yogurt
1 tsp. dried chia seeds
1 tsp. vanilla extract
3 Tbsp. strawberry jam or preserves
1 Tbsp. brown sugar
fresh strawberries or other fruit, diced

Directions:
  1. Add all ingredients into a large mason jar, except the fresh fruit.
  2. Shake well.
  3. Refrigerate overnight, or up to 3 days.
  4. Stir well.  Serve chilled over fresh fruit.

My last contribution are these fun and healthy Yogurt Fruit Pops.  They are perfect for a unique breakfast, after school snack, or dessert.  With a touch of Barlean's Omega Pals dietary supplement, you can't go wrong!

Ingredients:
2 c. vanilla yogurt
1 c. strawberries, diced small
1 1/2 tsp. Barlean's Omega Pals Straw-nana Flax oil
popsicle molds


Directions:

  1. Mix all ingredients together.
  2. Spoon into popsicle molds, tap against counter to release any bubbles, top with the stick.
  3. Freeze overnight.
  4. Run warm water over mold until pops come out easily.  Enjoy!

Mango Strawberry Smoothie

My next contribution is this Mango Strawberry Smoothie.  It is sweet and blended to perfection using Torani's mango syrup and Dixie Crystals sugar.  For added fun, I put the smoothie into a beautiful Revere Triangle Double Old Fashioned glass from Joyjolt.  You will love it for breakfast, brunch, a snack, or a treat! #Torani

Ingredients:
1 c. frozen mango
1/2 c. fresh strawberries, cleaned and diced
1 c. milk
1 Tbsp. Torani mango syrup
1 Tbsp. sugar (I used Dixie Crystals)
whipped cream, if wanted

Directions:
  1. Add all ingredients to blender.  Blend until smooth.
  2. Top with whipped cream and a strawberry.

Strawberry Milkshake Waffles


It's the first day of #EasterBrunchWeek #sponsored #ad!  I've been prepping recipes for the past few months.  Teaming up with some great bloggers and sponsors to bring you amazing recipes and a terrific GIVEAWAY!

Today, I have created a delicious waffle recipe featuring the following products: the Hamilton Beach Belgian Waffle Maker and Eggland's Best eggs. #HamiltonBeach #MadeWith EB  I received these products to create this post.  all opinions are my own.

Ingredients:
2 large eggs (I used Eggland's Best)
1 3/4 c. milk
1 c. strawberries
2 c. flour
1/2 c vegetable oil
3 Tbsp. sugar
4 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla
red food coloring (as many drops needed to create pink color)

Toppings:
1 c. strawberries, diced
maple syrup
mini chocolate chips
whipped cream

Directions:
  1. Heat waffle iron.  Spray with cooking spray if needed.
  2. Blend 1 c. of strawberries with milk.  Set aside.
  3. In a large bowl, beat eggs with wire whisk until fluffy.  Add blended strawberry milkshake and mix.
  4. Add remaining ingredients, mix thoroughly.
  5. Pour 3/4 cup of batter onto center of waffle iron (Check manufacturer's directions for recommended amount).  Close lid of waffle iron.
  6. Bake about 5 minutes or until steaming stops.  Remove waffle and serve immediately.
  7. Top with diced strawberries, syrup, chocolate chips, and whipped cream.

Chocolate Covered Strawberries Ice Cream Pie

I'm always trying to find gluten free dessert recipes that my hubby can eat.  While in my search I also want something that the rest of the family will eat too.  Then, a co-worker brought a similar pie like this one to work.  Rice krispie crust with ice cream....YES!!!!  Who wouldn't want that?!?!  I created my own pie with extra ingredients to make it a special treat.  It was a hit in my house.  I will be making more with different combinations soon!


Crust Ingredients:
1 Tbsp. butter or margarine, melted
1 (7 oz.) container of marshmallow fluff
1/2 c. mini chocolate chips
2 1/2 c. rice krispies

Pie Ingredients:
1/2 pint of strawberry ice cream, slightly softened
1/2 pint of fresh strawberries
Magic Shell hardening chocolate syrup

Directions:
  1.  In a medium bowl, mix together butter and marshmallow cream.  
  2. Add chocolate chips and rice krispies, mix thoroughly.  
  3. Press into pie plate.  I used the back of my measuring cup to help form the crust.
  4. Freeze crust for 30 minutes.
  5. Spread and press ice cream into crust.  Use back of spoon dipped in warm water to smooth the top.
  6. Decorate with strawberries and drizzle with chocolate syrup.
  7. Freeze until served.

Strawberry Fruit Fluff


This fruit salad is a long-time favorite in my family.  We eat it as a side dish, dessert, and even breakfast.  It is a simple and easy to make dish that will delight the whole family.  Take it to your next family gathering and have them devour it within minutes.

Ingredients:
1 large can of pears, drained and diced OR 1 pint of strawberries, diced
1 (16 oz.) container of small curd cottage cheese
1 pkg. strawberry flavored dry gelatin mix
1 (16 oz.) container of whipped topping
Toppings:  sprinkles, nuts, etc...

Directions:
1.  Combine the pears in a large bowl with the cottage cheese.
2.  Add the dry gelatin mix and stir until well blended.
3.  Fold in the whipped topping and refrigerate for at least one hour.
4.  Feel free to top with sprinkles, nuts, or leave plain.

Fresh Strawberry Jam



My Grandma Webb was an amazing cook.  One of my absolute favorite traditions was getting to pick out a jar of jam or apple butter from her freezer on my birthday.  What a wonderful treat!!  In honor of her, my girls and I love to make a batch of strawberry jam to share with family and friends. I hope this will inspire you to carry on this fun tradition with your loved ones.  

(printable recipe)



Ingredients:
"Ball" brand instant pectin
2 - 8 oz. jars
1 2/3 cup strawberries, hulled, mashed or pureed well
2/3 cup granulated sugar or sweetener

Stir sugar and pectin in a bowl.  Add strawberries, stir for 3 minutes.  Ladle jam into jars and let stand for 30 minutes.  Store in refrigerator or freeze.
