Candy Crunch Ice Cream Cake

 

This Candy Crunch Ice Cream Cake is an easy creation that you can adapt to your own favorite candy and ice cream.  Give it a try!  Your family will thank you.

Ingredients:
 
pound cake (I bought one from the grocery bakery section)
ice cream, softened (any flavor, I used cookies and cream)
candy toppings, chopped (I used M&Ms and Reese's peanut butter cups)
chocolate hard shell ice cream topping
parchment paper

Directions:
  1. Line a loaf pan with parchment paper strips.
  2. Lay a single layer of cake in the bottom of the pan.
  3. Top with a layer of softened ice cream.
  4. Sprinkle with chopped candy.
  5. Layer cake, ice cream and candy two more times for a total of 3 layers of each.
  6. Top with hard shell.
  7. Put in freezer until set, about 4 hours.
  8. Loosen sides of cake with a spatula or turner.
  9. Pull out by edges of parchment paper.
  10. Cut into slices and serve.

Chocolate Covered Strawberries Ice Cream Pie

I'm always trying to find gluten free dessert recipes that my hubby can eat.  While in my search I also want something that the rest of the family will eat too.  Then, a co-worker brought a similar pie like this one to work.  Rice krispie crust with ice cream....YES!!!!  Who wouldn't want that?!?!  I created my own pie with extra ingredients to make it a special treat.  It was a hit in my house.  I will be making more with different combinations soon!


Crust Ingredients:
1 Tbsp. butter or margarine, melted
1 (7 oz.) container of marshmallow fluff
1/2 c. mini chocolate chips
2 1/2 c. rice krispies

Pie Ingredients:
1/2 pint of strawberry ice cream, slightly softened
1/2 pint of fresh strawberries
Magic Shell hardening chocolate syrup

Directions:
  1.  In a medium bowl, mix together butter and marshmallow cream.  
  2. Add chocolate chips and rice krispies, mix thoroughly.  
  3. Press into pie plate.  I used the back of my measuring cup to help form the crust.
  4. Freeze crust for 30 minutes.
  5. Spread and press ice cream into crust.  Use back of spoon dipped in warm water to smooth the top.
  6. Decorate with strawberries and drizzle with chocolate syrup.
  7. Freeze until served.

Honeyed Avocado Ice Cream

Isn't this 12 Days of Bloggy Christmas just the coolest thing?? I'm so honored to have been a part of this! Today, I'm going to share a different kind of Christmas treat with you! Something that probably wouldn't be your first choice for a festive dessert, but hear me out...
I love Christmas, but I am the worst person in the world for self-restraint. I just can't do it. I have a massive weak spot for Christmas dinner. If there's turkey in the house, I'm going to eat it. Add in macaroni and cheese, sweet potato casserole, dressing and sweet potato and pecan pie and I have no chance of staying out of the fridge. That's where this dessert comes in! It's designed for people like me who have difficulty resisting the leftovers lure and who want something a bit less calorific than all those goodies I just described. There's no added sugar in this ice cream. No gluten and no dairy. No ice cream maker needed. It's good for you. Well, as good for you as any ice cream can be. Okay, well, it's better for you than yet another slice of pecan pie!  



Ingredients:
1 ripe avocado
1 frozen banana
1 tsp vanilla
1/2 cup honey
1/2 cup almond milk

Instructions:
  1. Leaving the banana in the peel, pop in the freezer until frozen through, about 2 hours.
  2. Halve the avocado and scoop out the flesh, placing it in a blender or food processor along with the frozen banana.
  3. Pulse to break down the banana. Once broken down, cream together the banana and avocado.
  4. Drizzle in the almond milk followed by the honey.
  5. Continue to process until the mixture is creamy and smooth. 
  6. Decant into a freezer-friendly container and freeze about 6 hours before serving.

Snow Ice Cream

One of my favorite family traditions is making snow ice cream.  It is such a magical thing to turn snow into something so yummy right before you kids own eyes.  My mom used to always send me out into the first snow of the year with a big bowl and spoon.  After filling it up to the top I would bring it in to her and she would make the magic happen.  Now that I have my own kids we enjoy doing the same thing.  The recipe we use is very simple.

Snow Ice Cream
1 extra large bowl full of snow, fluffy not mashed
1 can of sweetened condensed milk
1 tsp. of vanilla
Milk

Mix snow, sweetened condensed milk and vanilla together (I like to use a potato masher).  Add milk until the creaminess you desire...eat immediately.  It melts quite fast!!  Add your favorite toppings...chocolate chips, bananas, nuts, chocolate syrup etc...  The remaining ice cream (if you have any) can be frozen.  However, you will have to slightly defrost it and mix it up again.  Otherwise, it tends to form a hard rock.
