Bacon Ranch Tortilla Rollups

My last contribution are these Bacon Ranch Tortilla Rollups.  They are an easy appetizer to serve at any party or gathering.  Made with Cabot cheese, they are savory in every way.

Makes approx. 24 rolls

Ingredients:
1 (8 oz.) block of cream cheese, softened
1/2 c. shredded cheddar cheese (I used Cabot's Two State Farmer's)
1/2 pkg. dry ranch mix
1/3 c. bacon bits
2 large flour tortillas

Directions:
  1. Mix filling ingredients together.
  2. Spread over tortillas all the way to the edges.
  3. Roll up to form 2 long rolls.
  4. Fill in ends of rolls with filling using a knife.
  5. Refrigerate for at least 30 minutes.
  6. Cut into 1/2 inch rolls.

Crockpot Ranch Chicken


This recipe is one of our family favorites.  It is easy and delicious, a real comfort food for any time of year.  Serve it over rice, noodles, or as a sandwich.  Everyone will be happy!!

Ingredients:
4 lbs. chicken breasts, not frozen
2 packages of dry ranch dressing mix
2 packages of cream cheese
1 package of bacon bits
Rice or noodles, cooked 

Directions:
  1. Place chicken into bottom of crockpot.
  2. Sprinkle dressing mix over the top.
  3. Add cream cheese on top of chicken and dressing mix.
  4. Cook on low for 4-6 hours until chicken is done.
  5. Cook rice or noodles as directed on package.
  6. Take chicken out of crockpot and shred, add back to crockpot and mix all ingredients together to melt cream cheese completely.  
  7. Serve over rice or noodles.
  8. Sprinkle with bacon bits.

Ranch Oyster Crackers

Yummy!!  Don't these look like a tasty, salty, crunchy treat?  This was a terrific recipe that I discovered last year for the holiday season.  It is a super quick recipe that will be devoured in minutes.  Great for a last minute appetizer!!


Ingredients:
1 (1 oz) package ranch dressing mix
1/4 cup vegetable oil
1/2 tsp. garlic powder
1/2 tsp. salt
1 bag oyster crackers
 
Directions:
1. Preheat oven to 250°.  
2. In a large mixing bowl, combine first 4 ingredients and mix well. 
3. Stir in oyster crackers mix to coat. Pour crackers onto a large cookie sheet.  
4. Bake 15 minutes, stirring every 5 minutes.  
5. Cool and and store in a covered container.

Ranch Cheeseball



It's that time of year...holiday gatherings are being organized, gifts are being bought.  This is a super easy recipe that I like to serve at parties and holiday gatherings.  It can be made days ahead of time too.  Don't let the stress of entertaining get to you.  Enjoy this simple recipe instead!!

Ingredients:
2 pkgs. cream cheese, softened
1 pkg. Hidden Valley Ranch dry dressing mix
1 c. shredded cheddar cheese
1 1/2 c. chopped pecans

Directions:
1.  Mix cream cheese, ranch mix, and cheddar cheese together.  Let chill in refrigerator.
2.  After firm, form into a ball and roll in pecans.
3.  Serve with your favorite crackers.
