Affogato Caramel Vanilla Milkshake from Family Around the Table

Ingredients:
1
cup
almonds, chopped
2 cups rolled oats (I used Flahavan's)
3 tbsp. vegetable oil
1/3 c. honey
1/3 c. packed brown sugar (I used Dixie Crystals)
2 tsp. lemon extract (I used Taylor & Colledge's lemon extract paste)
2 cups rolled oats (I used Flahavan's)

2 tsp. lemon extract (I used Taylor & Colledge's lemon extract paste)
Directions:
- Preheat oven to 300 degrees.
- Line a baking sheet with parchment paper or a baking liner.
- In a large bowl, mix together oats and almonds. Set aside.
- In a small saucepan, mix the oil, honey, brown sugar, and extract. Bring to a boil and stir to dissolve sugar.
- Remove from heat and pour over oats and almonds. Mix until evenly coated.
- Spread the mixture onto the prepared baking sheet.
- Bake for 20 minutes, stirring half way through.
- Let cool to room temperature, break into pieces, and store in an airtight container.
