Ingredients:
1 c. uncooked quinoa
2 c. diced mangos, fresh or frozen and thawed
1 c. dried cranberries
1/2 c. shredded unsweetened coconut
3 Tbsp. raw honey
1/4 c. coconut milk
Directions:
- Cook quinoa as directed on package. Let cool completely.
- Add all other ingredients and stir thoroughly.
- Refrigerate for 1 hour and serve.
