Quinoa Fruit Salad

I've never had quinoa chilled with fruit.  Have you?  We recently went to a family favorite restaurant and had it.  I was so mesmerized by it that I had to make a recipe of my own.  This treat is simple, healthy, and will keep you coming back for more!

Ingredients:
1 c. uncooked quinoa
2 c. diced mangos, fresh or frozen and thawed
1 c. dried cranberries
1/2 c. shredded unsweetened coconut
3 Tbsp. raw honey
1/4 c. coconut milk

Directions:
  1. Cook quinoa as directed on package.  Let cool completely.
  2. Add all other ingredients and stir thoroughly.
  3. Refrigerate for 1 hour and serve.

Thanks ~ Nichi
