Makes 6-8 servings
Ingredients:
4 sweet potatoes, peeled and cut into 1-inch cubes
1/2 medium sized onion, cut into large pieces
1/2 tsp. dried thyme
1/2 tsp. salt
Glaze:
1/4 cup olive oil
1/4 cup honey
Directions:
1. Place potatoes and onions in a medium-sized pot, cover with water. Add thyme and salt. Boil for 15-20 minutes until potatoes are tender.
2. Remove from stove, pour off water. Place in large bowl.
3. Cover with glaze and stir, serve immediately.
