Here is a great recipe to use up those too-quickly ripening bananas. You know you hate to throw them away. Why not make something different and delicious? Try this recipe for a change. Nope, not bread...shortbread!! Bet you can't leave them alone.
Cookie Bars:
5 c. flour
2 sticks of butter, softened
1 1/2 c. white sugar
1/2 c. brown sugar
1 egg
2 tsp. vanilla
1 tsp. of salt
1/2 tsp. baking soda
2 medium, ripe bananas; mashed
Cream butter and sugars. Add egg, beat well and then add banana and
vanilla. In a separate bowl, combine flour, salt and baking soda. Slowly
add the dry mixture to the wet mixture until mixed well.
Place a strip of parchment paper down the middle of a 9x13 pan, overlapping ends of pan. Spread mixture evenly over paper.
Bake in a 375 degree oven for 25 minutes. Let cool in pan. Then remove by lifting parchment paper. Cut into bars and frost.
Frosting:
1/2 of one 13 ounce jar of Nutella spread
1 stick of butter, softened
2 c. of powdered sugar
1/4 c. of milk
Cream butter with Nutella and slowly add the powdered sugar. Add milk, until desired consistency is reached.
**I kept these in the refrigerator to keep the frosting from melting. They are best when set out for 20-30 minutes before serving to soften slightly.
