No-Bake Peanut Butter Cookies

This is a recipe that I've been making for many many years.  It is often requested by family and friends for gatherings.  A terrific easy recipe that is great for holiday gift treats or just a quick snack for the kids.  You gotta try this one.  I like to eat it warm out of the pan by the spoonful too!! 

Makes approx. 30 cookies

Ingredients:

1/2 c. sugar 

1/2 c. light corn syrup 

1 c. creamy peanut butter 

2 c. corn flakes 

Directions:

1.  Mix sugar and light corn syrup in large saucepan. Bring to a boil over MEDIUM heat, stirring occasionally. 

2.  Remove pan from heat. Stir in peanut butter. 

3.  Add corn flakes and stir until coated. 

4.  Drop by spoonfuls onto waxed paper and let cool. 

5.  Store in covered container.  Do not refrigerate...will get hard.

Cake Batter Krispie Treats

Rice Krispie treats have always been a favorite in my house.  Such a great way to have an easy, kid-friendly, gotta-have-something-sweet snack in minutes.  When I heard about adding cake mix to them I had to give it a try.  And everything is better with sprinkles!!  These will put smiles on the faces of your loved ones without a lot of time in the kitchen. Ingredients:

3 Tbsp. butter

1 (10 oz.) bag of marshmallows
2/3 cup boxed dry yellow or white cake mix

6 cups rice krispie cereal
1/2 cup sprinkles

Directions:

1.  Spray a 9x13 pan with nonstick spray. Set aside.

2.  In a large bowl, melt butter in microwave.  Add marshmallows and microwave in 30 second increments until fully melted and smooth when stirred.

3.  Stir in the dry cake mix and sprinkles.

4.  Stir in the cereal until it is completely coated with the marshmallow mixture. 

5.  Press into pan with a spatula sprayed with nonstick spray.

6.  Cool completely and cut into squares.

Mallow Brownie Bars

Everything that's irresistible about a dessert got rolled into this recipe. What's your favorite part? The brownies on the bottom? The marshmallow in the middle? Or the chocolate peanut butter crunchy goodness  on the top?  Just make sure you have a big glass of milk ready with this one!!

Ingredients:

1 (19.8 ounce) package fudge brownie mix  
1 (10.5 ounce) package miniature marshmallows 
2 cups semisweet chocolate chips  
1 cup peanut butter  
1 tablespoon butter  
1 1/2 cups crisp rice cereal

Directions : 
1.  Prepare brownie batter according to package directions. Pour into greased 9x13 pan. Bake at 350 degrees for 28-30 minutes. 

2.  Top with marshmallows; bake 3 minutes longer (marshmallows will not be completely melted).  Let marshmallows cool before topping with next step.
3.  In a saucepan, combine the chocolate chips, peanut butter and butter. Cook and stir over medium heat until smooth. Remove from the heat; stir in cereal. Spread over brownies. 

4.  Refrigerate for 1-2 hours or until firm before cutting.

Lemon Sunrise Muffins

I'm a huge fan of lemon...lemon cake, lemon cookies, lemon candy, lemon pie.  You name it, I'm there!!  However, I had never made lemon muffins before until my oldest daughter had a friend stay the night.  We got up needing something fresh and yummy to wake us up for the day.  I looked through the cabinets and found a lemon cake mix and lemon pudding mix.  Hmmmm...  After a few minutes I thought, why not?  I created a simple lemon muffin with crumble topping and lemon pudding glaze.  I think they were a hit.  My oldest daughter ate 3 fresh out of the oven.  Hope they make your morning as happy as ours!!

18 muffins:
1 lemon cake mix
1/2 box (3.5 oz) lemon pudding
3/4 c. water
3 eggs
1/3 c. vegetable oil


Topping: 
1/2 c. sugar
1/3 c. flour
1/2 stick of butter or margarine, diced
1 tsp. cinnamon

Glaze:
1/2 box (3.5 oz.) lemon pudding
1/2 c. powdered sugar
1/2 tsp. vanilla extract
3 Tbsp. milk

Mix muffin ingredients together until fully combined.  Fill paper muffin papers 3/4 full.  Mix all topping ingredients together with fork until crumbly.  Sprinkle 1 tsp. over muffins before baking.  Bake at 350 degrees for 18-20 minutes until lightly browned. Top with glaze while warm and serve.

I just learned from my very talented quilting mom about jelly rolls last week.  No, not the kind you eat...they are a preselected rolls of coordinating fabrics.  So much fun!!  Look at this adorable Jelly Roll Skirt from Adventures of a DIY Mom.

As many of you know, I love Mexican food...and dessert.  So, I was excited to see this combination with Cheesecake Burritos from Dishing with Leslie.  Can't wait to try this one!!

Banana Shortbread Cookie Bars with Nutella Frosting

Here is a great recipe to use up those too-quickly ripening bananas.  You know you hate to throw them away.  Why not make something different and delicious?  Try this recipe for a change.  Nope, not bread...shortbread!!  Bet you can't leave them alone.

Cookie Bars:

5 c. flour

2 sticks of butter, softened

1 1/2 c. white sugar

1/2 c. brown sugar

1 egg

2 tsp. vanilla

1 tsp. of salt

1/2 tsp. baking soda

2 medium, ripe bananas; mashed 

Cream butter and sugars. Add egg, beat well and then add banana and vanilla. In a separate bowl, combine flour, salt and baking soda. Slowly add the dry mixture to the wet mixture until mixed well.

Place a strip of parchment paper down the middle of a 9x13 pan, overlapping ends of pan.  Spread mixture evenly over paper. Bake in a 375 degree oven for 25 minutes.  Let cool in pan.  Then remove by lifting parchment paper.  Cut into bars and frost.

Frosting:

1/2 of one 13 ounce jar of Nutella spread

1 stick of butter, softened

2 c. of powdered sugar

1/4 c. of milk

Cream butter with Nutella and slowly add the powdered sugar. Add milk, until desired consistency is reached.

**I kept these in the refrigerator to keep the frosting from melting.  They are best when set out for 20-30 minutes before serving to soften slightly.
